I'm just past the halfway point of DS9, so I haven't met Ezri just yet. It's actually my first time watching!

Personally, I adore Jadzia. She's nearly tied with Garak as being my favourite character. I completely understand why you would think Jadzia isn't as fleshed out as character though. (excuse my paraphrase, I couldn't figure a different way to phase that;;). While her strength, and sense of humour is what draws me to her most, (her and Quark's friendship, as minor as it is, has to be one of my favourite relationships so far in the series) there is very little the show does to deepen, or capitalize her specifically.
All the episodes framed around her, are never really about her, it's either about Dax, or a problem with Dax where Jadzia is basically comatose and dying. Her strongest relationship is with Sisco, but even that's more about Kerzon. I'll was so angry when she asked Sisco to stop calling her 'Old Man' because she was Jadzia now, not Kerzon, and he just didn't. Ugh.
Most of it is just bad writing, imo. One of the main producers is basically a sexist douche, and was pretty horrible towards Jadzia's actress. He didn't think she was pretty, busty, or skinny enough, and (If I remember correctly) it was partly why she left the show. I found that they just didn't know how to write a strong, level-headed, woman, so they focused on Dax instead.
Ezri has a very distinct peppy sort of personality (from random episodes I've caught over the years) that's easy to play off of. Obviously the relationship with Bashir helps, since they can't seem to write women if they're not with a man.

No, no, it's fine! I'm happy to hear different opinions as long as they're expressed politely. Enthusiasm is actually a bonus here.

Yeah, that's how I felt when I rewatched the show, especially in the early going. It felt like, if it wasn't about the symbiont, Jadzia was relegated to the speaker of science technobabble, and while we get hints of her personality, she never really feels as fleshed out as other characters do.

And I'm so happy that Garak is your favorite character so far. There's just so much about him that's amazing.

I hope you enjoy the rest of the show! Things get pretty intense as it goes forward, but I thought it was executed well overall.
