I always thought uncalley valley meant that it was like, 99% real looking but there is just *something* about it that makes it off? Like Alita's CGI face in BAA?

Yeah this is what uncanny valley means, some people just confuse it as being interchangeable with creepy apparently.

Uncanny Valley: Almost photorealistic skin and character rigging in Final Fantasy: Spirits Within and Polar Express mocap.

NOT UNCANNY VALLEY: Stylized cartoon animation that imitates low-budget print aesthetics.

SA: And sure, it's entirely reasonable to dislike anime, cartoon, Pixar, Dreamworks, or Disney Animation Studios aesthetics on their own. But those character designs are stylized as heck in order to stay well out of the Uncanny Valley.
