To be fair:
1. The first anime blatantly had Envy be a "he".
2. The manga never said anything one way or another, and I assume the same goes for Brotherhood (which I haven't gotten around to watching). Envy doesn't have boobs or any other obvious indicators for being a woman, so most will assume a man (I know I did until now).
3. Most people don't have the guidebook, which seems to be the only source where you can find out about this. If you don't have it, you have no reason to doubt Envy being an androgynous male like they present - unless you want to headcanon away or you're trans/enby/other yourself, pretty much.
4. I didn't know this either and had to google-fu to verify your claim, and most people won't be assed to do that and will just assume that you're "one of those raging headcanoners who insist that their headcanon is canon, fucken eyeroll".
5. When I googled this, it took some effort to actually find someone stating an actual source (the guidebook). Most of the relevant results just went "Nah, he is male" or "I suppose you can go any way" or "I like to think Envy is nonbinary". There was a wiki that called Envy genderless, but the lack of source made it look like someone just edited it to suit their headcanon when no-one was looking. Granted, it's a bit unfair that this sort of thing needs a source while a character being male or female generally doesn't, but that's how it currently is.

So uh, unless people start making noise about this while providing pictures of the relevant page in said guidebook, people won't be catching on anytime soon. They will simply shrug your words off as a headcanon.

Basically, yeah

Even I just looked at this secret like "Hahaha even tho envys a guy? This person must like androgynous women then and thought/wanted envy to be a woman too" hahahah
