I feel like the Star Trek reboot is different than the sequel trilogy in that it's explicitly set in a different universe showing us different versions of the characters and not taking away from the original or preventing more Star Trek media that doesn't link to the reboot movies from being produced.

Of course, there's nothing preventing people from watching the OT and pretending the sequels didn't happen, but any future Star Wars media set after ROTJ will have to account for sequel canon.
