I'm going to bet that at some point the helmet thing is going to be addressed and we the audience (and maybe Din himself) will be able to get a little more context for it. Its most likely something that is either specific to his clan or tribe and/or an extreme measure that sprang up in response to the destruction of Mandalore and the massacre of its people. If its something that is recent, or is a distortion of some older Mandalorian custom, then Din's search for the Jedi (which will most likely lead to him delving more into the history of the Mandalorians, per his lead through the Armorer) may reveal to him that it isn't actually necessary for him to follow this custom to still be a Mandalorian.

That is my headcanon. In The Old Republic MMO, play a sorta adopted Mandalorian that only now is getting his own armor, but otherwise keeps his helmet off.

I think Mandalorians donning their armor 24/7 is new within that timeline, because of the Purge. As an emotional reason to be always on their guard, that eventually became tradition among the few mandalorians that remained.

That's what we took from it as well, so it may actually be what was intended and not just our head canon. }:)
