It’s definitely irrational, but I also find it believable and kind of moving. Mando was saved by a member of this sect when he was just a terrified, grieving kid with nothing. They took him in and gave him a sense of meaning and purpose (and family, in a vague, rigid kind of way). Being a Mandalorian is a huge part of his identity as a person. In fact, it’s most of his identity as a person. Before psuedo-adopting Baby Yoda, I’d say there really wouldn’t have been much of a person there if you took away his identity as a Mandolorian. For him, there’s no point in living if he isn’t a Mandolorian, because that’s all he is.

Baby Yoda has begun to give Mando a sense of purpose and self-identity outside of his Mandolorian identity but I don’t think he’s at the point yet where it’s enough to sustain him. I can see him taking his helmet off now, if he had to in order to save Baby Yoda. But I doubt he’d survive long afterwards.
