I think the show is pretty clear on the fact that Mandalorians NEVER take their helmets off in from of people. It's this unbreakable part of their code or whatever.

I don't think that's established canon outside of the show, though. It may even be at odds with what is established in the extended SW universe. So maybe that's where the confusion is coming from.

Yeah it really fucks with the...I don't know, weight? Of Sabine's plot line in Rebels.

It almost felt to me as if it was done to make give weigh to him finally taking the helmet off in front of the 'droid -- shorthand to let us know that he'd gotten over his hatred of 'droids.
