Thanks to the people who suggested bitter apple spray. It came today in the mail, and I tried it. My cat took one bite of my headphones and ran away. I could see her sticking her tongue in and out, trying to clear the taste. Hopefully it will only take a few times before she start associating the headphones with the gross taste.
