My first inclination would be to say Monster Hunter, but that isn't necessarily what I'd call "not-too-difficult", haha. There's Poka Poka Airou Village, which is massively pared down in terms of difficulty, but the dialogue/descriptions/writing is like 98% cat puns.

If you have a Switch, Breath of the Wild was honestly amazing for my vocab. All those foods! And not too many weird words.
