126) Never peek into a restaurant kitchen, then. No, seriously, people handle edible products with bare hands all the time. It's fine if your hands are well-washed, which I'm sure the Ace of Cakes team's hands are (they just don't show it on camera because hand-washing is boring). And I highly doubt the team is scratching their scalps or anything that'd risk getting hair or other ick on those slaved-over cakes. No food service worker with two brain cells wants to risk making someone sick or pissing off the health inspector: bad press kills businesses.

If it makes you feel better, products like fondant and icing have enough sugar in them to be very unfriendly to bacteria. Sugar is hydroscopic, which means that it absorbs water. Sciencey story short, it makes bacteria explode.

Thank you for that. It amazes me how much people get up in chefs' faces for not doing things that they themselves would (usually) find unreasonable to do in their own kitchens.
