I've also got The Undiscovered Country, Journeys Among the Dead by Carl Watkins on my to-read pile. It's an academic work about the Middle Ages and almost completely Anglo-centric but he taught me many years ago (the module was called 'Death in the Middle Ages' so it also covered execution and ghost stories) meaning some of the content is already familiar to me. Anyway, the long and short of it is that even within European history there wasn't this outright reluctance to acknowledge it. Sure, they thought there was something afterward that may or may not have been a comfort but that being a reality of their lives meant they spent a lot of time confronting death's existence and the need to die well.
I think my studies are perhaps why I didn't get upset about this series finale. I've already gone over why I didn't mind it the last time this came up so I'm more or less on the same page as the OP. It's very complicated and personal though so I don't think anyone is wrong for their reaction.
