why can't he eat?
and if he can't eat, do his enemies just wait for him to go long enough until he's too weak to do anything?

It depends on the exact type of invisibility, but for the type in the original novel (which is presumably what this is based on, however loosely, given that it's Universal), he'd have to manage to steal food without anyone seeing him do it, as the food remains visible while he's holding it, and then whatever he does manage to eat remains /partially/ visible (faint and "sort of ghostly") in his stomach until it's digested.

And basically, yeah, the one in the book ends up just whining and forcing people to house and assist him because he can't actually do much by himself, despite how much bragging he does.

The new movie is nothing like the novel, none of this applies.
