There are a lot of things people did before homogenization was a thing, but if you didn't guess it already, these things are considered outdated for a reason. Shook milk doesn't come together for long, it's the same disgusting separated mess it was ten seconds ago before you shook it, It is not the same as fruit juice or anything of the like because it is an animal based product that comes as it is generally served. I'm sure you can creep up on some cow farms and suck the milk from some utter, which I'm sure they did at some point in the past, but as it is now, it's kinda disgusting, much like drinking separated milk. It's fine if you do it, but if it's such a thing why would you even need to buy an entire store out of milk if you already have it frozen up already? The simple fact is that you don't need to, because it's stupid.
Not to mention curdling occurs not only naturally, but at extreme temperature variations, and with purpose when trying to dilute certain drinks. Separation might as well be curdling, because the particles separate all the same, even if they don't come together as clumps they're still not as they should be.
