Lady Sybil Vimes, nee Ramkin, considering that she has an all-girl boarding school education, a veterinary/breeder education, a childhood spent with the apparently somewhat graphic paintings of Ramkin Hall, and the friendship of Rosie Palm. I suspect Sam Vimes spent a lot of their early relationship being very startled. Also helps that she has leather armour on standby, and is burly enough to probably pick him up without much trouble.

Vimes himself, on the other hand, for all that he knows how to fleece a jade and has had significant run-ins with the Seamstress' Guild, I think probably never really considered any of those things specifically happening to him. I think he's more the sort to let Sybil have her way with him than to come up with ideas himself.
