Yeah, I've been cooking all our meals. Nothing extravagant, just a meat and two (if we can find meat, otherwise it's beans or eggs).

I'm bizarrely into potatoes recently. Tonight I sauteed some finely sliced green onions and Anaheim pepper in butter and then added leftover mashed potatoes and let the whole thing cook and get browned bits in it, and it was delicious.

I try to bulk everything up with vegetables. Add onions and stewed tomatoes to rice. Add peppers and mushrooms to eggs. Add finely chopped carrots to beans. Etc.

We're trying to make meals go as far as possible because it's hard to find stuff at the grocery store.

That sounds both healthy AND delicious. Meat can sometimes be hit or miss at the store, but there's still plenty of fresh/frozen produce so far. i could certainly use more vegetables in my diet.

Have you ever tried making mashed potato cakes? You can season them however you want, and they're a great way to use up leftovers:

Oh yes, I love potato cakes! I omit the flour and pan cook them until they thicken and then form them into patties with the spatula. My mom always made them with flour, though, and they're delicious either way.

Frozen vegetables are surprisingly good and well stocked at my local stores.

I hate cooking, but I'm doing it and trying to use the opportunity to eat healthier. I've been making casseroles because 1) they're relatively easy, 2) I live alone and can make leftovers last a long time, and 3) they remind me of my parents' cooking. I'm not a big meat person - I'll eat it, but I don't like cooking it/cleaning up after it. I'll bulk things up with veggies or beans, too. :)
