Weird thing called taco caserole. It's basically ground beef with taco seasonings, onion, black beans, tomatoes and corn mixed with rice and covered with cheese and baked until the cheese melts. I'm serving it with pico de gallo on the side.

Sure thing. I was kind of winging it, tbh...

Taco Casserole


Vegetable oil
1 lb. Ground beef
1 Tbsp. Worcestershire sauce
Taco seasoning
1 onion, sliced
1 can diced tomatoes with green chilies (or use regular tomatoes if you don't want it spicy)
2 cans black beans
1 can corn
2 cups cooked rice
2 cups shredded cheddar

Preheat oven to 350 F.
In a skillet, sauté ground beef until cooked through, then add onion and cook a few minutes until the onion is soft. Add worcestershire sauce and taco seasoning and cook, stirring a couple of minutes. Add canned tomatoes and stir a few minutes. Turn off heat and add beans and corn.

Mix the ground beef mixture with cooked rice and put it in a 9x13 inch casserole dish. Sprinkle cheese on top. Bake 10 minutes or until cheese is melted.



Pico de Gallo

3 tomatoes, finely diced
1 heaping Tbsp. finely diced red onion
1 heaping Tbsp. finely Chopped jalapeños (or to taste)
Salt and pepper to taste
2 tsp. Lime juice
Cilantro to taste

Mix all the ingredients and chill in fridge for an hour.
