It's really, really forgiving so long as you make sure there's enough liquid in the pot. When I'm feeling extra lazy, I just dump everything in a roaster and cook it low and slow in the oven, sticking the broiler on at the end to crisp up the chicken skin. XD Blasphemy? Perhaps. Delicious? Yes.

lol I'll keep this in mind! I'm waiting on a dutch oven, so this will be on my list of recipes!

When you stick the broiler on, do you have to move the roaster to a different compartment of the oven? I always assumed the part beneath the "oven door" was just for storage...or where the gas was lit... XD I must sound silly!

Nope, you keep it right where it is! The broiler is usually wicked hot metal rods on the roof of the oven (that I have accidentally set oven mitts on fire with).
