Relationships don't always develop in an obvious way. I've always been a fan of the ones that come about unexpectedly. (I also like that--and I don't know if it's the case here--so many Kataangers were R/Hr shippers and still bring up how Zuko and Katara were enemies, given that R/Hr, among many other canon-ships, involved two characters who basically spit fire at each other until finally getting together).
"The Boiling Rock" hammered it closed, I'll admit. Before that...eh, I was still hoping. Aang's kiss didn't seem to get the desired reaction.
But golly-gee, someone (hundreds of someones, apparently) had a different interpretation of a fictional story than you did...guess that gives everyone leave to mock us then.

Inconspicous ways is one thing, granted. But when the two have almost NO interaction for nearly three whole seasons, and when they finally do interact the girl is quite willing to rip the boy's testicles off given half the chance (and it's clearly not in a love/hate way), you CANNOT POSSIBLY say that such a relationship can be termed as "plausible."
I am not mocking you for liking your ship. I am questioning your observational powers, because they are clearly a bit askew. I have plenty of crack pairings that I love, but I have never, ever deluded myself while watching/reading a series and thinking, "It can totally happen!" while it was clear that the writers were going the entirely opposite way.
Zuko/Katara was a crack pairing for two and three quarters out of the three seasons. They had absolutely no interaction with each other until the very short scene in "The Crossroads of Destiny," and almost immediately thereafter Zuko betrayed Iroh, and helped Azula nearly KILL Aang. Which very easily negated any positive emotions Katara may have felt. Zutara barely hit the non-canon mark in the last four episodes, when Katara finally stopped looking at Zuko like he was the devil incarnate out to kill all those she loved.
