I both read and write Hannigram and tbh I'm not sure what you, OP is getting at. As in all fanfic, there are fics that are totally ooc but I find many ic, playing with the dynamics of the characters. Sure some make Hannibal out to be a monster (cos yep he is) and others are more grey in terms of their relationship. Most fics have them as 'murder husbands' because that is literally where the show was going to go in the fourth season, according to Bryan Fuller himself. I've read plenty of fics from full on BDSM (I can see that for these two) to a more gentle Hannibal. I can see that too. Hannibal in the tv series is different I would argue from the Hannibal of the books. The tv series Hannibal fell in love with Will. That is cannon. (Bedelia confirms to Will that Hannibal is in love with him.) Adding in Hannibal's oddly gentle touching of Will at times, I can see that it could def be conceivable to have a level of 'fluff' in a fic.
I see a lot of different fics exploring a lot of dynamics because that's what's wonderful about the show. It explores a lot of grey between the characters.
