On the one hand, I kinda don't blame them, because GO is one of those fandoms that is damn near completely about one ship and nothing else, and that can be aggravating. On the other hand, there honestly wasn't a lot else ficcable in canon*. In terms of ships, the Them are all kids, and Newt/Anathema was ... a thing that happened. About the only ship I enjoyed was Shadwell/Tracy, and that was more awwing about it in canon than wanting to write fic. Aziraphale/Crowley has 6000 years of backstory and a potentially precarious future. There's kind of a reason they're the sole focus of the fandom.

*I should clarify that I haven't seen the show, so I'm mostly talking book canon here

Given how Newt/Anathema and Shadwell/Tracy are definitely canon and just happen because why not, I can see how people aren't going to feel the urge to create a lot of content for them, even if they ship them. Aziraphale/Crowley has way more room for fic that gets them together, explores their feelings, explores their past, considers their relationship with Heaven and Hell, angels and and deamons, and so on, there's a lot more going for the ship besides fluffy domestic fic (although there's that, too),
