which would you rather read: an AU where one character in a ship is a celebrity and the other isn't

or an AU where both characters are celebrities

For me it depends on the canon dynamic the characters have.

I will say that I'm really put off by the "wish fulfillment" version of celeb/non-celeb AUs. By which I mean, ones where the non-celeb is just madly in love with the celeb from the start and the celeb is this perfect idol figure who is better than everyone, but who magically falls for the non-celeb for no apparent reason.

If it's going to be a celeb/non-celeb AU, I like the non-celeb to be just as much the focus, and have just as many cool, interesting qualities as the celeb, and treat the celeb like a normal person and call them on shit if they deserve it.

Obviously it's fine if other people want the Mary Sue, wish-fulfillment version where the god-like celeb just inexplicably falls for a bland normie. But personally I have zero interest in that.

Seconding the "depends on their dynamics" opinion. I only really like celeb/non-celeb AUs when the non-celeb either doesn't know the other person is famous or at least doesn't realize just how famous they are at first.

AU where both are celebrities. But that may be because I am thinking of one particular fandom.

It depends on the mood!

I think I generally prefer the first AU -- there's so much to explore there!

I feel like with having them both be celebrities, there would be a lot they could relate on -- they have similar lifestyles, etc.

I just prefer the idea of people from two different worlds!

Both celebs. If only because the celeb/normal person dynamic can have a lot of bad trope pitfalls to fall into.
