Eh, I thought that Gilbert in the books did mature faster than Anne - remember that he gave up the closest teaching place so that Anne could have it, and he would only have been a teenager then. Anne caught up when she went away to college.

Didn't he give up the Avonlea school so Anne could take care of Marilla and keep them from losing Green Gables, though? I mean, yes, very mature of Gilbert, but it's not as if Anne wanted the closer school so she could walk home from barhopping.

Plus, Anne had a scholarship to Redmond. She still could have taken up her college place, and IIRC Marilla initially wants her to. She sacrifices that in order to stay and care for Marilla. Yes, Gilbert is mature and generous, but he acts in response to Anne doing a mature and generous thing.
