Iowan here, but why the fuck would you make chili without beans?? I've never heard of that before. Gross. I'm with you; beans are the essence of chili.

(And don't be putting noodles in there, either. That makes it goulash, not chili.)

That's Texas for you. Big on the beef around here. I believe the explanation is that chili is short for chili con carne, meaning chili with beef. But beans just make it better.

It's a Texas thing, where "chili" is more like a beef stew, with a base of chilies.

tbf, a properly done chili in that style can be really good and you can always have beans on the side

the problem is more that many Texas chili people are assholes about it

see I hate beans, so Texas chili is just fine with me! Except that I feel like it's weird to just have a big bowl of meat with some onions in it, so I've been experimenting to see what else I would like to add so that it's spicy meat stew and not just a bowl of meat or a tomato soup.
