Vegas definitely has a burn out point (for most people it's season 8. I imagine some think it's earlier, but season 7 was genuinely edge of your seat for me) but I personally think it gets its groove back mid way through season 12 when they have two new leads. Having just one lead and one supporting changed is too similar to the old sometimes, especially in CSI when the dynamic between Catherine and Grissom is a huge part of why the show works. Russell and Finn aren't as great but they're still pretty good.

So I would recommend seasons 1-7 (and a few episodes here and there in the middle seasons) then 12.5-15

Oh! And Vegas has some pretty good fic depending on your ship (Greg/Grissom had a trio of writers who tended to work together and would write some gorgeous plotty and whumpy fic where everyone kicked all the butt. It's great!)
