Zuko was very cliche in the first season. They get more into his character and why he is the way he is later on and he kind of grows as a person through fits and starts (they all do) but yeah, early on it's kind of hard to care for him much.

It kind of reminds me of Clone Wars in some ways. The beginning was a little rough and had a very childish bent but as time went on and the original audience also was aging along with it you start to see more serious themes really get woven in. It's still a show for kids (though in Clone Wars' case there were several times I was like, "wait....this is heavy for a kid show...") since that's still the primary audience but it's just...grown up a bit and doesn't really sugarcoat that Bad Things are happening nor does it keep with the whole This Group is All Bad Guys and This Group is All Good Guys. You learn there's a whole range of personalities and some of the "bad guy" group actually are okay/good they just have different aims and goals but don't actually want to like...destroy the world...and some of the "good guy" group are really not that good and are only out for themselves and don't care if the world burns as long as they get what they want.
