Those are the right ages. It's just that the kid whose entire childhood up to the first episode was spent in peacetime was a lot less somber than the kid who was born in the depths of a world war.

Aang being less somber does not make him less mature in my opinion. Certainly not by the second season. There is this idea that somber and serious equals mature and humor is immature, and I don't think that is automatically true. That is just an assumption made. Aang in season 3 certainly doesn't seem like the same Aang as the first few episodes.

I has crushes on guys that much younger than me when I was 14.

It might have been due to how my school divided the grades (it was so small that 2 or sometimes even 3 grades were taught in the same class) and I think when you're not in a setting like school that strictly divides you by age, it's not nonsense at all for 1-2 years not to be a barrier.
