1st breakfast: baked egg white and kale with goat cheese on a whole wheat English muffin prepared last night and them microwaved in the morning (riffing off this recipe: https://www.budgetbytes.com/veggie-packed-freezer-ready-breakfast-sandwiches/), plus coffee with half and half

2nd breakfast: microwaved instant high protein blueberry muffin at work because I was still hungry mid-morning.

Lunch: coconut jerk black-eyed peas on rice with pineapple salsa (https://www.budgetbytes.com/coconut-jerk-peas-pineapple-salsa/)

Snack: red grapes and two Trader Joe's chocolate chip "dunkers" cookies.

Haven't had dinner yet.

I was gonna NG to ask how filling your meals were (then saw you were still hungry)

The breakfast sandwich was actually pretty filling Monday and Tuesday so I don't know what happened today. Maybe ate too little dinner last night. Lunch was good. I had never tried the recipe before but turns out it sits in your stomach in a very satisfying way.
