Kitty's always been Jewish, it's actually really well done in the original X-men as far as I've read. There's not a big deal about it, even when Magneto thinks he'd killed her I believe it was more about her youth that made him turn his tides than her faith, later on they bond(?) on being Jewish which leads to Magneto leading the New X-Men. It's all really well done.
