There have always been both types for as long as I've been reading fic. There are always trends within bigger fandoms, but there have been both types of AUs for a long, loooooong time.

"Alternate Universe - Canon Divergence" is the AO3 tag for the type you're thinking of. There are plenty still being written.

AYRT Yeah i've been in fandom a very long time and I never once saw a high school or coffee shop style au until the late noughties. It was all canon divergence. Maybe it was the fandoms I was in.

DA - I think the first time I saw a modern setting AU fic I actually thought, “Wait that’s illegal?!” It shocked me more than discovering fanfic was a thing.

For what it's worth I can confirm high school AUs have been around since I entered fandom spaces in 2001.

That's interesting, I didn't realise it started so early. What kind of fandoms did you see them in?
