Agreed. There are some characters for whom making an AU would be next to impossible because the elements of canon that shaped them into who they are are so very canon specific (for instance, I feel like AUing Ed Elric would be difficult in a lot of circumstances given how thoroughly his character is shaped by the existence of alchemy, but you could AU him into another fantasy setting with magic instead of alchemy and get a similar result), but for the vast majority of characters, you can AU them quite easily and find elements of the new canon which hit the same story beats even if they aren't exactly the same. It just takes a little creativity and a good understanding of the character in question, what sort of person they are and WHY they are that way.
