Not OP, but I can think of quite a few canons where they're mentioned or shown on screen (IDs, vital stats on the computer, etc.), but also a lot of creators put that kind of stuff in supplemental materials (like official websites) or some fan will ask and they'll give one. If it's somewhere, some enterprising fan will probably put it on a wiki - like, Sirius Black's birthday is November 3, 1959 (https://harrypotter.fandom.com/wiki/Sirius_Black).
