Settlers of Catan. Best for most situations, it's reasonably easy, not too long, and there are plenty of jokes to be made about having wood for sheep.

NHB Cheat is the game I have the best memories of, but frankly Cheat is probably a fecking annoying game with the wrong people playing it.
