I don't think it's much different than things like following certain singers/writers, just that you can rely less on knowing what kind of things (genre, quality, etc.) that the artist will produce.

I would follow Matt Damon as a young to late teenager (he's one of two I've done this sort of thing for) because he was reliably in decent projects. As a child, I was like "oh ok I'll go" toward Pirates of the Caribbean because I liked Orlando Bloom as Legolas. I also have some anti- versions of this where I side-eye the project if a certain duo of actors are together in it, due to HEAVILY disliking two movies where they were together that had the same dynamic.

There are people who do it because they find someone attractive, but it's not the only reason, or even often the most dominant reason.
