Pepper Potts. Fics generally treat her way worse than the films, as an uber competent boss bitch foil for Tony. At least she had some character in the movies and is probably the most interesting women-what-dates-the-superhero. What I wouldn't give for a good Pepper-centric fic ...

I wonder if this has anything to do with the fact that she was played by Paltrow, who is generally disliked for a variety of admittedly somewhat compelling reasons

Could be a factor at least. I think it's mostly just fandom's disinterest in women when there are slashable men to write about. It's not like any of the other supporting women were treated any better (with the exception of Darcy "insert Mary Sue here" Lewis).
