It was always 'Mione because Ron said that once with his mouth full (not as a nickname) and therefore they could claim "canon nickname".

The fact that it appears in canon at all gave it the edge, two decades ago, and now it has two decades of fanon behind it. Whereas "Herm" just feels completely out of left field, and also weirdly forced and unflattering.
