It's rare to find in fanfiction but but both well researched and well written medical horror and gore. There's just something downright magical about an almost poetic description of meat.

Pre-destination/fate vs. free will. Particularly if it's uncertain whether or not one side wins.

Also the bond/bitterness between estranged family members.

Sacrifice: heroes sacrificing themselves for others, others sacrificing themselves to give the hero a chance to win, etc.

Hurt/comfort: I like both sides of this. I like reading characters go through trauma, and I like reading characters get comforted and healed from trauma. Can be together or separate.

Torture, but written in a way that is a psychological exploration of the characters. Especially if the character being tortured is in the villains hands because they sacrificed themselves for the greater good.

Hero journeys, sometimes following canon, sometimes AUs, but always a combination of action/adventure and great characterization.

a bond between a human (or other sapient being) and an animal of some kind.

Fics that get inside villain heads and explore who they are and what makes them tick.

And then just straight up PWPs.
