I'm of the opinion that you can write about a character's vulnerabilities without warping their personality entirely or stripping everything that makes them interesting away until they're basically an OC with the canon-character's name slapped on.

You can like what you like but I actually enjoy working within the framework of canon and writing a story I'd like to see while keeping the characters personality in tact. That's an actual challenge to me, writing OOC melodramatic OTT wangst is not.

This. But I also think that everyone is free to like what I want. In character is my top priority, and OOC instantly ruins my enjoyment. But if OP likes OOC, they are free to like what they like. They aren't hurting anyone.
