I liked it at first, but the constant stress about water/food items really makes it hard to enjoy the exploring.

It's been a while since I played it but I'm pretty sure you can turn the food and water options off.

Yep, at game start you can choose between different modes and one option is to turn food/water off. During the game you can only change it with console commands though I think(on PC at least).
