“Moon” sign is usually a part of Western astrology using the same constellations as “Sun” signs (what people typically think of as their zodiac sign). Just...using the moon instead of the sun. It’s sort of intended to expand on your horoscope. Like “you’re mostly influenced by your sun sign but other aspects may be affected by your moon sign”. Has nothing to do with the Lunar New Year OP was referencing.

That actually answers my original question of why three signs and what they were.
