That's kind of an odd reading, since it's not like Penny is supposed to have a fabulous life. Penny has dated jerks, she's not particularly good at her chosen career and she has a job she's not proud of--the guys are at least successful in one of those areas. (Of course, that makes me wonder how it is that a waitress at a Cheesecake House manages to afford the same apartment as two high-level physicists who are sharing, but whatever.) I mean, the show presents Penny as having these insecurities so she's sympathetic.

Oh, I agree. She doesn't have a fabulous life. But she's pretty and relatively well adjusted. She's into the things the so-called normal people are into and she's not into things like science/nerd-culture. She makes statements all the time about how abnormal they are (although, as Sheldon said, it's relative and in that group SHE is the abnormal one), and the general public agrees. And then, (surely not all, but a great deal of) people to make comments about how the guys should be conforming to that idea of "normal." And that is frustrating, because the point of the show is that they are (for the most part) happy with their lives, that anyone can be happy no matter how far they might be from that ideal.
