Lamb is traditional and, imo, pretty easy. I'm also very fond of oven-roast veggies: get some chunky carrots, toss 'em in olive oil and a drizzle of honey, and pop 'em in for about an hour. Dead easy.
Lots of people love roast potatoes, but I like mash better, and you can add little touches according to personal taste like parsley or cream or garlic.
