what bugs me is when they have a character have a baby when it seems to be totally OOC for them.

This bugs me too. Some writers just can't imagine everyone not wanting babies. Some characters just wouldn't want kids. Some characters are also in situations/jobs/etc. where kids wouldn't work well, and the characters are smart enough to know this. Just, babies don't fit in ever scenario, and "babies ever after" is not always the perfect ending.
