The thing is that I would mostly be okay with the "don't date me I'm a werewolf" aspect as reasonable on his part if she weren't a Auror. If any non-werewolf knows how hard that relationship is going to be, it's probably her.

That's interesting that she comes across as sensible to you, because I think she comes across as the type that likes a bit of trouble to me.

Maybe sensible is not quite the right word, more like... practical? IDK though, you can like to party and still be sensible imo

And yeah I totally agree about Lupin - I always thought the more interesting thing is to interpret that as basically an excuse for his fear of emotion and emotional intimacy. It's one of the most interesting things about his character to me, that this is a man who spent a decade thinking that one of his best friends had murdered his two other best friends, and he was now basically going to be alone and cursed for the rest of his life, and the kind of psychological effects that would have. There's that one line in Prisoner when Harry tells Lupin the dementors make him remember Voldemort murdering Lily and it's like "he made a sudden motion as if to grip Harry's shoulder but thought better of it". And maybe I was reading too much into it but I really liked that line and I always found that very expressive of very intense, but very tightly controlled, emotion, when you read it with the context that Lupin was personal friends with Lily. I think there's a lot of interesting stuff you can do with that character, and I liked the dynamic between that version of Lupin and Tonks a lot.

But of course I was also a lot younger then and who knows whether those stories were ever any good at all.

I don't think either of them is all that sensible out of their professional lives, hence Lupin coming off that way to Harry, who viewed him as a teacher for a very long time. They did after all conceive a child in the middle of a war, and from Lupin's reaction it was clear Teddy was unplanned.
