Frozen veg is the answer to your problem, my friend.

Also, just because a vegetable is past its best, doesn't mean it can't still be eaten. Chuck them in a stew or soup and you won't notice that they weren't quite as fresh as when you bought them. Cooked veg can be kept for a few days in the fridge or weeks to months in the freezer. Planning ahead can help.
