I'm down for cultures that pride themselves on being self-interested and cutthroat, those are come of the coolest fictional civilizations.

It being built into characters on a genetic level is lol, though. Even for internal consistency. Because if alignment can be inbuilt then why aren't all members of "good" races "good"?

Like, if individuals of evil races are never allowed to be neutral or good, then good races shouldn't be allowed to "fall" or "lose" alignment either. If alignment built into everyone's bones, it should be so regardless of player/personal choices, right?

I'm OK with it for stuff like angels or demons, which are supposed to embody the concepts (though I really like 'rebellious' ones), but natural species, or even supernatural species that don't exist specifically to be 'good' or 'evil' (or 'lawful' or 'chaotic') can have culturally-induced tendencies, but not 'they're all like that!'

That's all subjective too. As someone who is not religious, having "angels" as enforcers of gods or higher powers don't necessarily make them a "good" race to me even if the text insists they are.
