Diner coffee is good because diners use Bunn coffeemakers.

The hot water is already hot and doesn't hit the grounds like a spitting sprinkler. It makes a good pot of coffee in five minutes.

I have one, and my brewed coffee tastes great, whether it's expensive coffee or Folger's.

OP here. It might also be because my coffeemaker is Japanese and brews in two steps: hot water seeps into the grounds first, the coffeemaker pauses for a bit for them to soak, then the rest of the water goes in. It's not a Bunn but I dunno, the coffee is awesomely good.
