I'm not sure why you didn't like Zuko's redemption arc, but if it helps you feel better, there was supposed to be an additional season to the show, but sadly the bad liveaction movie took up Nickelodeon's budget. Presumably, the additional season would've helped the Zuko's redemption not feel so rushed.

I would have still loved to have another season(damn you Shyamalan). But I don’t agree that Zuko’s redemption arc was rushed. I personally think he would have joined Team Avatar at about the same time, and the extra season would have been for more development of him as someone who’s trying to better himself and adjusting to being part of the team. As well as for other plots not directly related to Zuko, obviously.
