I wash, chop and stick the extra celery in a freezer bag for future recipes. It's easy enough to break off approximately one rib's worth of chopped celery and if it's for soup, the soggy texture isn't a problem.

If you boil it very briefly then cool it then freeze it, it won't go soggy. The quick boil denatures the enzymes that otherwise continue to break it down in the freezer.

My freezer is way to small to store all the stuff everyone suggests storing in the freezer.

As someone who lives in a 1 bedroom apartment with half the living room turned into a closet-sized second bedroom, I got a very small deep freeze about a year ago and IMO it's worth the space it takes up.

If you just can't afford it, I get it. But if a lack of freezer space is something that you're frustrated by, and you can afford the $150 for a small deep freeze, in my experience it's worth doing.
