I'm not a fan but my housemate is, I have heard way too much about it and cannot even find half a shit to give anymore so here you go - ELI5 with heavy salt. Do not consume if you have high blood pressure.

Base level, it's a group of Funimation voice actors playing DnD on a podcast, which has gotten so popular that they've had multiple campaigns now, published graphic novels, commissioned action figures, and then crowdfunded a Netflix cartoon.

The cartoon is presently animating like...their first campaign from years ago, and at a breakneck speed apparently, the pacing is making up for not being able to lavishly spend six hours on every episode. The sheer level of dick and sex jokes is apparently how it is in the podcast, so if that's offputting at all, it's par for the course. People who have been following CritRole for years are excited because they know what's happening. People like me who know nothing about the setting or characters are very confused.

My only nitpick here is that is that the animated series season one is starting with the second arc which is a fan favorite (and was voted for with the kickstarter).

So if it feels like it dropped you in the middle of things -- then that's valid because it sort of has. Not to mention they are tweaking the storyline to help it run smoother.
