As a fan, I'm not sure what you're meant to find deeper in it--there's only 6 episodes out so far, barely scratching the start of an arc. Any "meaning" the original campaign eventually has is definitely not supposed to be grasped immediately, so you're good there.

As far as what it is: a bunch of voice actors started streaming their home game, that stream got super popular and spawned 100s more episodes of DnD, they decided to try their hand at turning their first finished campaign an animated show, and that's what's on Prime Video right now.

Their first campaign, IMO, is very First DnD Characters and Standard Fantasy Tropes, but they have fun with it, so I have fun with it. The cartoon now is a bit wild to me because on the one hand, cool an adult fantasy cartoon that doesn't give me a headache, but on the other, this is literally a bunch of professional voice actors acting out their own OCs, which is as cool a concept as it is bizarre.

The fanbase seems to be full of conversation about how every single thing in the show means something else, like each episode is one hundred percent symbolism and easter egg.

Eh, well, to some of the fans who watched the original campaign, it is! But not much more so than any given adaptation (maybe a little moreso given the cartoon is made by the same creators as opposed to new creators, but still)
